Chef Alet’s Sweet & Sour Chicken

INGREDIENTS

  • 4 large chicken breast fillets, no skin
  • 150g Corn Starch
  • 1 cup water
  • 1 cup all purpose flour
  • 1 teaspoon salt
  • 2 cups oil, for shallow frying
  • 1 cup Teriyake Sauce
  • 1 cup Sweet & Sour Sauce
  • 1 cup fresh pineapple, cut in small cubes
  • Chopped spring onion, garnish
  • Toasted sesame seeds, garnish

METHOD:

  1. Cut chicken breasts into cubes.
  2. Mix water and corn starch with a whisk or fork and pour over the chicken cubes.
  3. Mix really well and set aside for 30 minutes.
  4. Add salt to the flour and mix with a spoon.
  5. Heat oil in a medium sized pot.
  6. Shake off excess corn starch / flour mixture and add chicken cubes to flour. Coat well.
  7. Fry in hot oil until golden and drain on kitchen towel.
  8. Mix sauces and pour over warm chicken, mix lightly.
  9. Garnish with spring onion and sesame seeds.
  10. Serve with fluffy Basmati rice.
