INGREDIENTS
400g Gnocchi
300ml Cream
60g Basil Pesto (or any green Pesto)
10g Salt
150g Cherry tomatoes, halved lengthways
10g Garlic, crushed
50g Olive oil
100g Feta Cheese, crumbled
METHOD:
Preheat your oven to 180℃
Mix the halved tomatoes with oil and garlic. Place it on a baking tray and grill it in the heated oven for 20 minutes.
Boil a large pot of water, and add some salt. Wait for the water to boil properly – lots of bubbles.
Add the Gnocchi to the boiling water and take them out once they float to the top.
Mix the cream, pesto and salt with a whisk and pour over the warm Gnocchi.
Dish up two generous bowls of the Pesto Gnocchi, top with roasted tomatoes and crumbled Feta cheese.
